Probably better to just take one long flight? And walk her around the plane some, so she doesn't sit too long. The on and off and waiting for another flight is hard too, and probably worse than just taking the one long flight. It might be good to actually stay over in a city on the journey and stay in a hotel one night in transit, and have a night of sleep. That could be complicated too. One straight flight does seem to be easier, if your mother-in-law is able to cope with that.
