Subject: Question on hands

Am I correct in thinking that when the book says "partners take both hands", that unless specifically stated (uncrossed), the ladies hands shall be crossed right over left and the gents hands shall be uncrossed? I've seen some dances performed with hands both ways in different teams and have been confused.
