Hi Patty, sending you the biggest warmest hug I have, missed you so much and your posting today really made my day. My ISP has been up and down all day, really hard to get on her till almost afternoon. Now don't know how long it will last??? Any body's guess.

About canned goods, When you buy them take a permanent magic marker and put the date purchased and what you paid on the label, AVOID buying in small stores where they would not have a fast turn around, so that you know it's fresh. I've talked with experts from the canning companies and unless a can is dented, or compromised in another way, they will keep for five years. BUT you never have to have that happen. Buy only what you use, and by labeling everything, also putting the price on it, this lets you know when it's on sale for a good deal again. You will rotate everything, while still keeping a three to five year supply. Keep in the coolest, NOT damp room, never basement. Keep in the darkest area as possible.

If something swells assume its bad and do not open it. I've done this sort of storage for 32 years and have had TWO cans go bad in all that time. But I highly recommend dehydrating as much as a person possibly can. This stuff keeps for years in plastic bags that are tied tight and put into a five gallon pail with a good tight lid. The entire pail will weigh only a few pounds is water tight and can easily be thrown into a car if a family has to evacuate, whereby canned goods are heavy.

Reconstituting them is easy, most will mix well together making soups and stew, OK might not taste as good as fresh homemade but will make hardy meals. Things like dried apples and other fruit can be nibbles on just like that. NUTS need to be VACUUMED packed to keep or reg. canned nuts will not keep more than a year in cool dry conditions. Yes, nuts can be kept for a few months, then if you have the luxury of a freezer they can be frozen till you are ready to eat, stretching out their shelf life.

When dehydrating, the roots crops are great for bulk and full tummies, but also do up leaves, like cabbage, mustard greens and chard at a lower temperature, like 140F crushed in soups AFTER the soup is cooked is a great way to get extra vitamins that only 'green' food can give. Or powder and mix in a smoothie for more vitamins.

Patty, hope this helped you a bit, glad to hear you are looking into getting a food supply. Things are only going to get worse, prices are going to go higher. Quebec did the dumbest thing, we had a lot of pig farmers and a lot of pigs were going to the market, keeping the prices lower than other places, well the gov. paid farmers to reduce their pigs, giving the meat to the homeless shelters to keep it from flooding the market. By next spring Pork will cost TWICE what it cost us this year, what's wrong with people doing this, don't they know there's a food shortage and people are hungry?
