I think you will find that as a whole the British Army in the Colonies at the time was in fact honourable and wanted to fight the traditional way on the battlefield. However, you had the commander of the Green Dragoons, Colonel Tavington, who wanted to not only make something of himself but also gain land with a British victory. It was at his order, not Lord Cornwallis, that the Churhc was burnt down with the towns people in it.

You will also find that it was the Americans who in this film are actualy beng protrayed as what I would say in the wrong. They did not follow traditional sensibilites and fight on the field, instead they attakced underprotected supply lines and harrased the enemny in what is now called gureilla warfare.
