A full answer would require a lot of research. You could do that in Alain Demerliac's volumes or the post 1786-volume of Winfield and Roberts, French Warships in the Age of Sail.

A quick and dirty look at Jan Glete, Navies and Nations, has the following statistics about French warships in 1815 and 1820:

So there was no massive contraction in the size of the navy; if there were a lot of disposals, there were a lot of replacements. I do know that ships under construction in ports that did not remain part of France, like Venice or Flushing, were abandoned. They might or might not have been completed and put into service by navies of the successor states.

There was a big decrease in construction in 1816-20 compared to 1811-15. From the building and current inventory statistics, you can estimate disposals between 1815 and 1820:
