Subject: OT: It's HOT!!! I need Electric Skillet and Cool Recipes!!!

Right now at 8PM, it's 98* out with a heat index of 104* here!!! I just checked the forecast and Wed and Thurs it is supposed to be 100* and on Fri and Sat 99*!!! That's the actual temperature, not factoring in the heat index!!!

I was thinking maybe I would take my electric skillet outside on the patio table to cook, instead of heating up the house anymore than it already is, by running the oven. It's a pretty big electric skillet (about 1/2 the size more than a reg square one) that I got as a wedding gift. I haven't used it much because it was so big, but thought maybe it would keep the heat out as much as possible and we could still have some good meals. Maybe I could even cook a couple of things at once, refrigerate one, then microwave to heat it up to eat later. My family isn't big on roasts. What could I cook outside in it? I need some ideas for chicken, etc.

I would also welcome cool meal ideas. My reg microwave is down right now, too, but we have a little one we're using and we're getting by with it. My reg microwave is under warranty and the circuit board went out last week (it's not even a year old till next month) and they had to order a new one. The repairman is very unreliable in getting back to us about it. Grrrr!!! It looks like he won't be back to put the new circuit board in till Thurs...maybe, if he shows up! I really wasn't going to go into that, but had to explain that we are using a little microwave right now, not a full-sized one.

Pasta salad, big old chef salad with eggs & ham chunks ,
potato salad , coleslaw ...Fix things on the grill.
I know crockpots are good this time of year but they too give off heat unless you use it outside too.
I`ve been staying in the pool. It`s been hot here too.The fan helps at night but the daytime just blows hot air...

Hi Patty,
How about a Taco Salad and for dessert fix Chocolate Wonderful better known as Sex in a Pan. You can prepare the hamburger meat for your salad in your electric skillet. And for the dessert crust, make a graham cracker crust instead of the flour crust. That way you don't have to use your oven.

STEAK & SPINACH SALAD

6 cups fresh spinach, rinsed and dried
1/2 cup dried cranberries
1/2 cup walnut halves
1 tomato, sliced
1 pound top round steak, thinly sliced
1 pinch salt
1 pinch ground black pepper

Arrange spinach on a large plate. Sprinkle with cranberries and
walnuts, and arrange tomato slices on top. Set aside.

In a non-stick skillet cook steak over medium heat until no pink
remains and steak is thoroughly cooked.

Arrange cooked steak over salad. Sprinkle salt and pepper on top, and
drizzle with your favorite dressing. Use a light flavored dressing.
Citrus dressings are especially good on this salad.

Makes 2 servings. Doubles easily.

WOW!!! You gals are fast!!! Thanks for the ideas and links! I will have to try out some cooking creativity!!! LOL

I was in the pool yesterday with my little niece and her 10 yr old brother. She just started swimming lessons yesterday. That girl's a fish already! She loves the water! We were in from 3-4:15PM. It was hot out, but it wasn't too bad in the water. Sometimes the water is too hot to get in. We don't have a tree in the backyard anymore, since we had to cut it down a few years ago. Our neighbor does, but his wasn't shading our pool much. I got out our big umbrella for a little shade over the pool. It helped some, at least we could get out of the direct sun. We all had ice water in thermal mugs to drink on the pool rail. They drank most of theirs while we were out there. The kids weren't ready to get out at 4:15, but my Mom was coming by to get them, so they did.
I had things to do today to get ready for my craft class tonight, so I didn't get in today.

Sorry I just had to say this, Sounds like you are already COOKING without a Skillet! Ha
We are forcast the hot temp. in Southern Indiana too but missed the heat index that some not so far away have today!
With all of the heavy rain we have had it is hard to find a dry time to mow, weedeat or till the Garden!
I am an outdoors person, but stay in air these days! once a person is overheated they say it can stay with you!

You'd better believe we're "cooking" here in OK, Blazer!!! LOL!!! Hey, if the name "Blazer" wasn't already taken that would be a good name for me!!! LOL!!!

Well, I tried the electric skillet outdoors yesterday. Totally burned some chicken on 1 side in about 15 min!!! I told you I hadn't used it much! LOL!!! I have discovered you don't cook as hot in an electric skillet as you would in an oven!!! I burned a meatloaf in it about a month or so ago, too. Hmmmm...maybe my skillet runs hotter than it should??? Will try again with the temperature lower and see how it goes. It was nice to keep the heat outside, though. The kids were in the pool while I was burning, 'er "cooking" it yesterday and they thought it smelled good. I don't usually burn too many things, however, except maybe toast, cause it cooks so quickly under the broiler. I learned that from my Mom cause she burns toast, too! It's a family recipe, I guess! LOL!!!
Maybe my name should be "Burnie"???!!! LOL!!!

Anyway, thanks for all the ideas and I'll give it another try. Anything to keep the heat out and the cool in!

" Blazer" I have a 1996 Chevy Blazer, Husband says I have no trade in value on it now, I just continue to keep it! I Love it, it is really handy grocery shopping and for the few Craft shows that I still do in the fall. I can pack a lot into it. Will have to change my voy name if I trade cars ha!

I like to make a tuna salad... tuna, mayo, onion, chopped celery, pepper and chinese noodles added just before serving. Put in a half of melon or over Quartered pineapple. :)

CJ, I E-mailed Kathy and let her know you wanted the recipe. We're friends from high school and live in the same town, about 2 mi apart. She said she will get it out and send it soon, but was needing to go to bed tonight.
