Aunt Frances’ Pizza Wiches
1 lb ground beef
1/2 C onion, chopped
1 lb Cheddar or Mozzarella cheese, grated
1 (10 oz) can tomato soup
1/2 tsp oregano
1/2 tsp chili powder
1/4 tsp garlic salt
1 loaf French bread

Cook ground beef with onion until done, drain grease. Add grated cheese, soup, oregano, chili powder and garlic salt to beef/onion mixture. Stir until cheese is melted. Slice French bread lengthwise. Spread beef/soup mixture on French bread and place under broiler until bubbly.

BISCUIT TAMALE PIE

1 lb ground beef
1/2 C chopped onion
1/2 - 1 tsp chili powder
1/4 tsp garlic powder
1/8 tsp red or black pepper
12 oz can Green Giant Mexicorn golden whole kernel corn with sweet peppers, drained
8 oz can tomato sauce
7.5 oz can Pillsbury refrigerated buttermilk or country biscuits
4 slices American cheese

Heat oven to 350°. Grease 9” or 10” pie pan. In lrg skillet, brown ground beef & onion; drain grease. Stir in chili powder, garlic powder, pepper, Mexicorn & tomato sauce. Simmer while preparing crust. Separate biscuit dough into 10 biscuits. Arrange biscuits in prepared pan; press over bottom & up sides to form crust. Spoon hot meat mixture into crust. Bake at 350° for 25 min. Slice each slice of cheese into 3 strips. Arrange in lattice fashion on top of hot pie. Return to oven & bake for additional 5 min until crust is deep golden brown & cheese begins to melt. Let stand 5 min before cutting.
4-6 servings

Crazy Crust Pizza (no-roll out crust)
My recipe calls for 8 oz can tomato sauce and
1-2 tsp oregano leaves instead of the pizza sauce. I like the tomato sauce mixture.

Enchilada Casserole

1/4 C chopped onion
1 lb ground beef
1/2 can mushroom soup
1/2 can tomato soup
1/2 can tomato sauce
1 can Ro-Tel tomatoes (put in blender until mixed)
1/2 tsp salt
1/2 pkg Doritos
6 oz shredded Cheddar or longhorn cheese

Brown ground beef and onion. Drain grease off. Stirring until well cooked. Stir in soups, tomato sauce and Ro-Tel. Cook until mixture boils.
Place Doritos in 8”X8” baking dish, crush slightly. Cover with meat mixture and shredded cheese.
Bake in 350° oven for 20 min.
Serves 4-6.

The cook used to make this for the kids at the daycare I worked at a zillion years ago. Yummy!

BEEF -n- BEAN BURGERS

1 lb ground beef
1/2 large onion, chopped
1/2 tsp salt
1/8 tsp pepper
1 can pork & beans
1 3/4 to 2 C grated Cheddar cheese
1/2 C catsup
1 T mustard
hamburger buns (split or whole)

Brown meat and onion; drain. Add salt, pepper and partially mashed beans. Stir till thoroughly mixed. Add cheese, catsup and mustard; stir together. Cook slowly until bubbly. Serve on toasted hamburger buns. Also good with Fritos corn chips.
Serves 6.

This is called 7 Can Soup, but obviously there's 8 cans in the ingredients. Someone must have added another can of something as the recipe was passed around. I will add some barley to mine when I make it cause I like it. I usually leave out the beans and corn, though, as they don't seem to agree with me or my husband anymore, but it's my absolute favorite soup ever. When I make this, I usually make a pan of cornbread to go with it. Yummy!!!

7-CAN SOUP

1 lb ground beef, browned and drained
2 cans Ranch style beans
2 cans Veg-All
2 cans minestrone soup
1 can corn
1 can Ro-Tel tomatoes

Cook in a crock pot or slow cooker. The longer it’s cooked, the better the flavor.

Hamburger and Macaroni Recipe

Ingredients
• 1 pound ground beef
• 1 yellow onion, chopped
1 green pepper chopped
• Olive oil
• 1/2 teaspoon Vegesal or other seasoned salt
• Dash crushed red pepper
• 1 large can (28 oz) of diced tomatoes
1 can tomato soup
1 cup tomato juice
• 1 Tbsp Worcestershire sauce
• 1/4 cup chopped parsley optional
• 16 oz Big Elbow Macaroni (use rice pasta for wheat-free version)
Method
1 Get a large pot of hot water heating and begin cooking the macaroni as per the directions on the macaroni package.

2 In a skillet, brown the ground beef in a tablespoon of olive oil on high heat. Stir only infrequently so that the ground beef has an opportunity to brown.
3 In a large skillet, **sauté chopped onion and green pepper with a tablespoon of olive oil on medium high heat. Add the ground beef and lower the heat to medium. Add a dash of crushed red pepper. Add Vegesal or other seasoned salt. Add celery seed. Add canned tomatoes, tomato soup and the tomato juice. Add Worcestershire sauce. Bring to a simmer and let simmer for 5 minutes. Mix in the drained and cooked macaroni and parsley. Simmer for another 5 minutes.

I saute the peppers and onions in the same pan I do the burger and then add the burger to the pepper and onion and brown all together.

BBQ hamburgers.

3 lbs ground round
3 saltine crackers, crushed
1/4 cup water to each lb of hamburger
Mix well and make into patties, brown quickly on each side
place in a baking dish and

Cover with sauce (May use your favorite sauce.)

1 cup granulated sugar
1 cup chopped onion
1 cup ketchup
3/4 cup vinegar
5 tbls. worcestershire sauce

put this into a sauce pan and bring to a boil and cook 10 minutes, place hamburger patties into a baking dish and pour sauce over, bake at 350 degrees 1 hour.

Makes about 15 patties depending on how big you make them.
These can be made well in advance and put in the freezer to get out later to bake. You can always bake them then put them in a crock pot to keep warm. These are delicious.

Pizza Bites

Getting together to watch a game? Or maybe watching a different sort of game? Pizza bites are awesome party food. This recipe makes three trays which means you can pop them in the freezer and always have a quick appetizer on hand. Although, they are usually so popular that you’ll wind up baking all three trays in one night!
Pizza Bites
makes 48 bites divided into 3 trays, prep 20 min, cook time 20 min
• 2 recipes pizza dough (or 2 cans refrigerated pizza dough)
• 8 oz block mozzarella cheese
• 4 oz thin sliced pepperoni
• 2 tsp Italian seasoning (combine oregano, basil, parsley, and garlic)
• 1/4 cup olive oil
• 3 tbsp grated Parmesan cheese
• pizza or marinara sauce
1. Prepare pizza dough and roughly chop pepperoni. Cut block of mozzarella into 48 cubes.
2. If you are going to bake some (or all!) right away preheat oven to 400°F. Grease 3 pie pans.
3. If using refrigerated pizza dough: roll one dough out into a large rectangle and cut into 24 pieces. Repeat with 2nd pizza dough. If using homemade dough just pinch off walnut sized pieces as you go.
4. In each dough piece place a couple pieces of chopped pepperoni and a cube of cheese. Seal dough around meat and cheese and place seam side down in pie pan.
5. Repeat, placing approximately 16 dough balls in each pie plate.
6. Once assembled, combine oil and spices and brush over the dough. Sprinkle with Parmesan cheese.
7. Now you can cover with plastic wrap and refrigerate or freeze or you can bake right away.
8. When ready to bake: bake at 400°F for 16-20 min. Serve with warm pizza or marinara sauce.

I discovered this dough from Carmen Cooks when I tried her calzone recipe. I have used it over and over since then! I absolutely love it because it is so forgiving and easy to work with. Doubled, it makes the perfect amount of dough for this recipe. I used to use the refrigerated pizza doughs for this recipe, but I actually find the homemade dough far easier to work with.
Basic Pizza Dough
makes 1 recipe pizza dough, prep 10 min, rise time 1 hour
• 1 pkg active dry yeast (or 2 1/4 tsp loose yeast)
• 1 cup warm water
• 1 tbsp olive oil
• 1 tsp salt
• 2 3/4 cup flour
1. Combine yeast and warm water, stir to dissolve.
2. Add oil, salt, and flour. Stir to combine.
3. Once dough starts to come together, turn out onto a floured counter and knead to thoroughly combine-until dough is smooth and elastic. If it is uncooperative let it rest for a few minutes and come back to it.
4. Place dough ball in a greased bowl and cover loosely. Allow dough to rise until doubled, approximately an hour.
We like all of these and the last one I am also going to make for football games. Yum
I also am going to make some of the above recipes. My mouth is really watering. Thanks so much for the recipes.

This is from a lady at our church. She put it in the church cookbook.

Spicy Spaghetti Pie

1 lb ground beef
1 (26 oz) can spaghetti sauce
1/2 C water
8 oz spaghetti
1 egg
1/2 C milk
1 C Monterey Jack cheese, grated
1 C Cheddar cheese, grated

Brown ground beef and drain off excess fat. In saucepan, add spaghetti sauce, meat and water. Simmer. Prepare spaghetti, drain. In a 9”X13”X2” casserole dish sprayed with vegetable spray, mix together spaghetti, egg and milk. Spread the meat mixture over the pasta. Sprinkle both cheeses over the top. Bake at 425° for about 15 min. or until cheese is melted and bubbly. Let stand 5 min.

LOL, Linda!!! Just try them a little at a time!!! OK? Don't want the grocery store to run out of hamburger!!! Everyone in your part of NE would be mad at me for posting all of these!!! LOL!!!

The Spicy Spaghetti Pie is NOT spicy at all!!!

I forgot to mention that I have tried ALL of these recipes...over the years, of course!!! All of the recipes that I posted before today I already had on the computer, so they were easy to post.
The ones I posted today, I had in my homemade cookbook, so I had to try to find them online cause I couldn't remember where I originally got them.

hashbrown casserole
1 lb hamburger
2 cans cream of mushroom soup
2pkgs hashbrowns or tater tots
1 pkg american cheese or cheddar

brown beef and onions and drain grease add soup then layer your pan with hashbrowns soup mixture until you have 2 or 3 layers then top with cheese and bake for about an hr at 350 degrees

Here's a couple more, tried & true:

Meat loaf idea
Using your favorite meat loaf recipe, divide it in half.
Make a cup or so of bread stuffing.
Put ½ of meat mixture in baking dish. Then layer on the bread dressing. Top with the rest of meat.
If meatloaf is put in electric skillet, cover loaf with cream of chicken or mushroom soup.
Cook till done.
(I use this same idea when I make meatballs. Put some stove top dressing in a bowl & add milk. Let it soak up the milk then add to your meat mixture.)

Microwave meatloaf
Sauce:
2, 8-oz. tomato sauce
½ c. packed brown sugar
2 tsp. prepared mustard
In a small bowl, combine brown sugar, tomato sauce & mustard. Set aside.
2 eggs, lightly beaten
1 large onion, chopped
¼ c. (7-8) crumbled crackers
2 lbs. Lean ground beef
1 tsp. salt
¼ tsp. pepper
garlic powder
In large bowl combine eggs, onion, crumbs, meat, garlic, S&P. Add about ¼ of tomato sauce mixture – stir well. Place in a microwave dish – place strips of green pepper & extra onion slices all around & on top. Pour rest of tomato sauce mix over top.
Cook uncovered – full power till done. It will brown some on top.

Porcupine meatballs
1 lb. hamburger
onion to taste
¼ c. uncooked rice
1 can tomato soup
¾ can of water
garlic, salt, oregano, sage
Mix hamburger, rice & onion to form balls the size of walnuts. Place in a skillet large enough to avoid crowding. Pour soup & water over the balls, & cook over med. heat for 45-60 min., or till rice is tender.
Occasionally turn the meat balls carefully, during the cooking, so the meat will not burn.

Shepherd Pie
½ lb. hamburger
1 can tomato soup
1 can water
onions
1 can green beans
1 c. cooked carrots
2 c. whipped potatoes
brown hamburger & onions. Add tomato soup & 1 can of water, green beans & carrots. Mix tog. ten top with whipped potatoes & bake in over for ½ hr at 350. Serve hot.

Sloppy Joes
1-2 lbs. Ground beef
1 can cream of chicken soup
½ c. sliced celery
minced onion
½ c. catsup
prepared mustard to taste
salt & pepper to taste
Brown ground beef with onion & celery. Drain. Add can of soup, undiluted; catsup, mustard, S&P. Mix well.
Serve over buns.

I make this for my son and he loves it...

1 lb chopped meat (lean)
1 small onion (chopped)
1/2 bell pepper chopped (optional)
1 small can of mushrooms (drained also optional)
1/2 cup A-1 Steak sauce (may add more sauce if desired)

Spray skillet with Pam and cook onion. pepprs and mushrooms then add the chopped meat and cook until browned. Drain any grease from pan. The add A-1 steak sauce and cook til sauce is heated.

Serve either on hamburger buns like sloppy joes or over cooked egg noodles, rice or potatoes.
