That is the exact one I make and it is soooooo good! I, too, found it on the internet. I think I posted it here once upon a time! It's my son's favorite cake. I made it into cupcakes last year for his birthday for him to take to work. So, it works fine as cupcakes, too. It's so easy to make!

Patty,that was the one you posted=i was looking yesterday and the day before for low cal--low carb recipes=was every where=that hit me for a friend of mine not a big cook-she could do this she loves anything lemon-how easy to bring to a dinner==thank you for posting it--its so much nicer making a tried and true recipe,

Lemon tartsThese recipe is a great twist on the classic butter tart, and is a perfect spring time treat! INGREDIENTS:•       1/2 cup butter•       2 teaspoons lemon zest•       1/3 cup lemon juice•       1 1/2 cups white sugar•       3 eggs•       2 egg yolks•       12 (3 inch) tart shells, baked•       3 egg whites•       1/4 cup white sugar ________________________________________ DIRECTIONS: 1.     Melt butter or margarine in a saucepan. Add rind, lemon juice, and 1 1/2 cups sugar. Beat eggs and egg yolks until thick, and add to lemon butter mixture. Cook over low heat, stirring constantly until thick. Chill. 2.     Beat 3 egg whites until stiff. Gradually add 1/4 cup sugar, and continue beating until stiff and glossy. Fill baked tart shells with lemon custard, and top with meringue. 3.     Bake at 350 degrees F (175 degrees C) just until tarts are a delicate brown color. mmmm, those sound yummy. Mary, I forgot to tell you that I always substitute equal amounts of applesauce for the oil in all my cake and brownie mixes. For example, if the mix calls for 1/2 C oil, you would use 1/2 C applesauce instead. I learned that when I went to WW years ago. There are a lot less calories in applesauce than in the oil. And yes, I do use it in the Lemon Pillow Cake instead of the oil. I actually think they stay moister with the applesauce.

Here's another REALLY good lemon recipe! One of my best friends gave it to me. Delicious!!! Let me warn you though, this dough is VERY STIFF!!! I burned up my mixer the 1st time I made it, but it WAS an old, cheap mixer. I also didn't know that you could add a little more Cool Whip to make mixing it easier. I have since gotten a heavy duty mixer, add a little more Cool Whip, when needed and it comes out perfect. They are a soft cookie and they stay soft. You can change the flavor of cake mix, if you don't like lemon or if you just want a change. I know it's been made with chocolate and with strawberry cake mixes. A niece likes strawberry best.

Funny story about this recipe...my Dad's part of the entire family was in charge of the family reunion one year. I made about 4 or more batches of this to take to the reunion. One cousin caught my sister-in-law just before we left and asked her if she had made these cookies. She told her no, that I had. My cousin asked her to ask me to come see her, so I did. She wanted the recipe, actually, it was her HUSBAND who wanted it. He had told her they were the best cookies he'd ever eaten (and she's a good cook!) and that he was NOT leaving the reunion site without the recipe!!! I did give it to her from memory because I'd made so many batches just the day before. Needless to say, I think he liked them! LOL!!!
I don't know why the name, but that's what my friend's recipe called it.

De la Poz Lemon Cookies
1 lemon cake mix
2 C (4 1/2 oz) Cool Whip or a little more (1/4 C – 1/2 C)
1 egg, beaten

Powdered sugar

Mix Cool Whip, cake mix, and beaten egg together with a mixer until all ingredients are well-blended. Drop 1/2 T (about, depending on how big you want them) of dough into small bowl of powdered sugar; roll and place on greased baking sheet. Bake for 10-15 min** in a 350° oven.
You just want them to start browning on top when you take them out. They may not look done, but they will finish by the time they cool off.

**Patty’s notes: I use a cookie scoop and bake for 12 min on an Air Bake cookie sheet. Mix only 1 batch at a time! Do not flatten. I usually leave them on the pan for about 5 min to cool before removing. Makes 3 1/2 doz small cookies.

You're welcome, Bernadette! There may be some mix that it won't work in, but I haven't found it yet. I always use it and so far, it's always worked for me.
If you try it, let me know if you think it's moister than with the oil. I don't know if it really is or if it's just my imagination.

Patty,thanks for telling us about the applesauce and the other recipe==when i baked a lot--i always kept jars of baby food--applesauce and prunes-i put either one for moistness-then i also had the empty jars for crafts

She's having a candy bar instead of a wedding cake. I'd like to also try the lemon pillow recipe as cupcakes. Think they'd mind having cupcakes amongst all the cookies?

CJ, they ARE wonderful! I'd try out the recipe before planning to take to your cousin's wedding, if it were me! I just want to KNOW that they are something I can make and that I am happy with the results.
I'd told my SIL that I'd bring a cranberry cake I'd never made to her house at Thanksgiving one year. I thought it called for way too much sugar in the recipe, but since I'd never made it, I used exactly what it called for. It was an awful FLOP!!! What a mess and big expense down the drain!!! So, I had to make something else really quickly to take with what I had on hand. Also, to my embarrassment, I had to explain why I didn't bring the cranberry cake I'd said I'd bring. Ever since then I will make a "test run" of a new recipe before committing to bring it. Learned my lesson for sure!!! LOL!!!

I wouldn't mind having cupcakes amongst all the cookies, if it were me, but it's not my wedding. Maybe just ask her.

I mentioned above about making the cupcakes for my son to take to work for his birthday last year. He said there was 1 lady who couldn't figure out HOW I got the lemon pie filling in the middle of the cupcakes! The pie filling is heavier than the cake batter, so it sinks a little into the cake batter and then the cake batter cooks up and over, covering at least, most of the pie filling. She was confused about it, so my son had to explain it to her! LOL!!! That's why it's called a "pillow" cake. It looks like a tufted pillow on top. Several people asked him to get the recipe for them! I get asked for the recipe nearly every time I take or send it somewhere.

Another tip I did on his cupcakes: I put the icing in a plastic cake decorating bag with a star tip and just quickly squirted a swirl of icing on the top, like bakeries do and then added some sprinkles on it. That made icing 30 cupcakes go pretty quickly. Just thought I'd mention that, if you make them for your cousin's wedding.

Patty, we think alike. I was planning on doing a trial run for my immediate family & friends. Family isn't a big lemon lover, hope the friends are. I always use a decorating bag for fancy cupcakes ... ever use them for deviled eggs? Works great! I searched the web last night looking for wedding sprinkles (bells, white hearts), but haven't had any luck yet.

The best thing is that the table centerpieces are candles with fake lemons & limes in the glasses. So I volunteered to make lemon square cookies & now hopefully these cupcakes (after I ask the bride).

I was thinking about making mini cupcakes (muffin size) so they blend in with the cookies. Do you think the recipe will adapt to a smaller size? Guess my family will find out. lol

I don't know why the mini cupcakes wouldn't work, CJ. I'd just not put too much lemon pie filling in them.

I just looked at my mini muffin pan and got out my measuring spoons to see what I thought the amount of pie filling should be for them. I think maybe 1/2 to 1 teaspoon per muffin cup. Does that sound about right to you? Now you have me wanting to make some mini ones!!! LOL!!! I may have to try that next time.

I can see how the cake decorating bag and tip would work well for deviled egg filling, too, but no one here eats them, so I haven't tried it. That's a good idea, though.

Patty, thanks for all your tips & links. I think you're right with 1/2 - 1 tsp. of filling. I plan on making my trial run when I return from vacation (we leave Tues. for a week). The wedding is July 11, so I'll plenty of time to test the recipe. I'll let you know how they turn out.

I will check the links for decorations tomorrow. I just came home from a Penguin victory party & am heading off to bed.
