Speaking of cashews in the shell...

Apparently, Diamond Foods uses Red #3 to dye pecan shells red in its Blue Diamond line of mixed nuts "for cosmetic reasons". So stay away from this product as red dye #3 has been "highly implicated" as a carcinogen. Most suppliers use vegetable-based dyes to "uniformly color" their pecan shells. Why corporations are allowed to continue to put people's health at-risk is beyond me.

I always super-rinse my pecans-in-shell, then let dry for a good amount of time before storing - no matter the source - especially important in this new global marketplace because who can you trust these days (not even the American-owned Diamond Foods!).
