I think the jet pack was used on almost every episode (if not all).

There is a segment about the "jet pack" on the DVD's documentary, in the special features.

It was a REAL functioning jet pack, and if I remember correctly, it was ex-NASA.

Sorry I can't provide more info, it's been awhile since I watched the documentary, but the answers to your questions lie there.
