The filmed cuts of all four cast members were shot at the studio and on location. I don't think they did more than one take. They filmed Hoss at the table with the chicken and the editor would edit the shot in anyway he liked. It could be the start or the middle of the filmed cut with a character in action. No doubt some were filmed for the opening credits, as you don't see them in any episodes, where others were reprinted from certain episodes and cut in.

Ex: the filmed cuts of Joe were culled from 12's "Thornton's Account" and cut in, but you had one where he goes through the barn window and is in the fight mode. That and the others are "reaction shots" and common to do in film and TV.

Jamie's outdoor horseback was culled from the teaser that opens "The Luck of Pepper Shannon" when his horse gets spooked and runs with him in the saddle at Big Sky Ranch.

A teaser is the first part of the episode that you see before the cast credits are seen. It opens up the show and gives you a "tease" of the story. In fact, it is written separately from the rest of story and filmed the same way.

Ray Teal's first episode was "Showdown" from season two. Bing Russell was cast as a heavy in 3's "The Honor of Cochise" and "The Long Night." That season, Deputy Clem was first played by character actor Robert Foulk in "The Gamble." In the fourth year, they brought him in as Clem and he was there on a semi-regular basis through season 6. In season 7, Bing Russell came back in "The Other Son" as Sheriff Walker. The shots were filmed at Baldwin Lake; that is the dry lake a few minutes outside Big Bear. I know it well.

Ray Teal took the bulk of the role as the Sheriff, but he was well into his middle 60's by 1965. Bing Russell was much younger and by season 8 (1966-67) you can see they had him in many more episodes than in his first cycle (1962-1965). Ray retired in 1972 as he was around 70 by then.
