Up until the 1920s or so, the vast majority of watches and cases were made by different companies and sold separately. A customer would go to the jeweler and select what they liked, and the jeweler would put the two together. There were lots of case companies, and many designs, from very plain to quite ornate. There are some very helpful instructions for how to open the case to get to the serial number that's on the movement of the watch at this link: http://k_singer.home.comcast.net/opening_pocket_watch_cases__k.htm Or, you can try taking it to a knowledgable jeweler, or better yet a watchmaker, to open it for you.
