Subject: Pineapple dessert?

Too many years back to let on, I used to make a pineapple dessert, know it wouldn't be kosher now, with the egg scares, but here is what I do remember, and would like some input from someone out there who maybe could fill the gaps?
I would make graham cracker crumbs, and add melted oleo, at that time was all I could afford, but still was good. Then chill that. I would take 1 raw egg, and beat in oleo, powder sugar, flavoring of some kind, use this as the middle layer, and finally top with drained pineapple from a 20 oz. can, I think. Also sprinkle more crumbs on top. I can't remember if the bottom crust was baked, but think not, as it was a chilled dessert, and we scarffed that up like no one's business. Children sure liked it. Would like to recreate it sometime for fun, and would like to know how and what to put in it. Many thanks to anyone who can help!

Here is one that is like what you are looking for. You could sub with the graham crumbs and oleo if you still wanted to! It add whipped cream to the pineapple but I don't see where that is necessary for a great tasting pie.

PINEAPPLE REFRIGERATOR DESSERT




1 1/2 c. crushed vanilla wafers
1/2 c. soft butter
1 c. sifted confectioners' sugar
1 egg, at room temperature
1 c. heavy cream
1 1/2 c. well-drained crushed pineapple
Spread 1 cup of crushed wafers in 8 or 9-inch square buttered pan. Beat together until light; the butter, confectioners' sugar, and egg. Spread over crumbs. Whip cream until stiff. Fold together cream and pineapple. Sprinkle top with remaining crumbs. Cover with waxed paper. Chill overnight.
