Subject: Creamed Chicken and Biscuits

Creamed Chicken & Biscuits


1/2 large onion
1 1/2 t. butter (I used 1 1/2 TBSP)
4 C. chopped cooked chicken
1 (103/4 oz.) can cream of chicken soup
1 C. sour cream
1/2 C. milk
1/2 C. ch. pimento (optional)
1 C. shredded mild Cheddar Cheese, divided
6 frozen biscuits, thawed

Preheat oven to 350º. Grease a 11x7 baking dish.
Chop onion. Heat butter in nonstick skillet over med-high heat until melted. Stir in onions; saute till tender.
Combine onions, chicken, soup, sour cream, milk and pimento in bowl and mix well. Spoon into baking dish. Bake for 15 min. Remove from oven.
Sprinkle baked layer with 3/4 C. of the cheese. Arrange biscuits on top in a single layer. Sprinkle with remaining cheese.
Bake until biscuits are golden brown and sauce in bubbly, about 20 min. Serve immediately.
