Subject: Oatmeal non bake Cookies

QUICK OATMEAL DROPS

2 cups sugar
1/2 cup butter
3 tbsp cocoa
1/2 cup milk
put in pan on top of stove and boil for 1 1/2 minutes. pour while hot over the following:
1/2 cup peanut butter
1 cup coconut
2 1/2 cups oats
1 tsp vanilla
1 cups nuts
stir all well and drop onto waxed paper.

heres another version:
PEANUT FUDGE DROPS
1/3 cup cocoa
1 1/2 cups sugar
1/2 tsp salt
3/4 cup peanut butter
3 cups quaker oats
2 cups coconut
2 cups nuts
1/4 tsp light corn syrup
1/2 cup milk
combine cocoa, sugar, salt in boiler. stir in corn syrup and milk. cook over medium stirring until sugar dissolves. continue cooking, stirring occasionally, to soft ball stage. remove from heat and stir in peanut butter, oats, coconut, nuts. drop onto waxed paper.

I made a combination of the two recipes while camping (used corn syrup, not butter, and homemade Trail GORP). I was impressed. The cookies can be carefully shaped into balls while warm and left on clean rocks or a pot lid to cool if you lack wax paper.

If you carry along those "snack packs," many cereals can also be added for texture and crunch, such as Sugar Frosted Flakes. Cookies can be left to cool on the inner liners of the boxes.

another version:

No Bake Cookies
2 cups sugar
1/2 cup fat-free milk
1/2 cup butter or stick margarine
3 cups quick-cooking oats
1 cup flaked coconut
6 tablespoons baking cocoa
1/2 teaspoon vanilla extract


In a large saucepan, combine the sugar, milk and butter; bring to a boil, stirring constantly. Boil for 2 minutes. Remove from the heat. Stir in the oats, coconut, cocoa and vanilla. Working quickly, drop by rounded tablespoonfuls onto waxed paper. Let stand until set, about 1 hour. Yield: 3 dozen.
