Subject: Shrimp Baked Potatoes

This recipe is from Paula Deen's Lady and Sons restaruant in Georgia.

Shrimp Stuffed Potatoes




6 large Baking Potatoes
Vegetable or Olive Oil
8 tbsp. Butter (1 stick)
2 c. Shredded Cheddar Cheese, divided
2 c. Shredded Monterey Jack cheese
2 c. Sour Cream
Salt & Pepper
1 lb. Shrimp, peeled & sauted
Paprika

Wash and dry potatoes. Gently prick them with a fork on all sides. Coat each potato with oil, place on a foil lined pan and bake at 350 for about an hour.

Remove potatoes from the oven and slice each one in half. Gently scoop out the pulp and place in a bowl. Using a mixer on high speed, mix the potatoes, butter, sour cream, salt & pepper. Fold in shrimp. 1-1/2 cups of cheddar cheese and all of the Monterey jack cheese.

Gently stuff the mixture back into the potato shells, making sure you don’t break them. Pile mixture as high as you can on top of the shells. Sprinkle with remaining cheddar cheese and a bit of paprika for color.

Bake at 350º for about 20-30 minutes or until browned on top
