Cleopatra Chili. Elizabeth Taylor used to have batches of this flown to her when she was on location shooting Cleopatra.


Cleopatra Chili

1 1/2 tablespoons vegetable oil
1 pound green peppers -- chopped
1 1/2 pounds onion (3) -- chopped
2 garlic cloves -- minced
1/2 cup fresh parsley -- minced
1 1/2 pounds lean ground beef (chuck)
1/2 cup chili powder
2 tablespoons salt
1 1/2 teaspoons pepper
1 1/2 teaspoons cumin seed
1 1/2 teaspoons monosodium glutamate (Accent)
2 quart jar pinto beans -- undrained
5 cups canned tomatoes -- undrained, chopped

In large soup kettle or stockpot on medium heat, heat oil. Sauté green pepper in hot oil until tender. Add onion, garlic and parsley and sauté until soft.

Meanwhile, in a large skillet on medium heat, brown meat, breaking up pieces. Pour off fat. Stir in chili powder, salt, pepper, cumin and MSG.

Stir meat mixture into vegetable mixture. Stir in beans with liquid and tomatoes with liquid. Simmer, uncovered, 30 minutes, stirring occasionally. Skim off fat. Makes one gallon.
