Blueberry Cake

Preheat oven to 350º.

1 - 1.5 cups fresh, washed blueberries
1 - 2 tbs flour (to coat berries)
1 cup butter or margarine, softened
1 cup sugar, divided
2 eggs, separated
1/4 tsp salt
1 tsp vanilla
1/3 cup milk
1.5 cups flour
1 tsp baking powder

Sprinkle 1-2 tbs over berries and coat well. Set aside.

Spray bottom only of an 8x8 pan with baking spray.

Beat egg whites until stiff, gradually adding 1/4 cup sugar. Set aside.

Cream butter. Add vanilla and mix well. Add egg yolks; beat well. Add remaining 3/4 sugar; beat well.

Mix flour, baking powder and salt together. Gradually mix the flour into the butter mixture, alternating with the milk. Beat until combined. Fold in egg whites and flour-coated berries. Mix well.

Pour into prepared pan. Sprinkle top with some sugar, if you like (or after the cake is done, sprinkle with confectioner's sugar.) Bake for 45-50 minutes or until toothpick inserted in center comes out clean.
