Subject: Peanut Butter Pie

Peanut Butter Pie

2 baked deep pie shells
1/2 box confectioners sugar
1 cup peanut butter
1 1/2 cups milk
1 cup sugar
4 eggs, separated
1 stick margarine
2 tsp vanilla, separated
1 1/2 tsp cornstarch
1 Tbsp sugar

In a bowl, mix 1/2 box of confectioners sugar and one cup of peanut butter together. Divide into equal portions and pat each portion in the bottom of the pie shells. Set aside.

In a saucepan, cook milk, 1 cup sugar, 4 egg yolks, margarine, 1 tsp vanilla, and cornstarch until it thickens, stirring constantly. After it thickens, pour mixture over the peant butter mixture in the pie shells. For topping, mix egg whites, 1 Tbsp sugar, and 1 tsp vanilla with a mixer until thick. Scoop on top of pie fillings in pie shells and brown on broil for just a minute until well browned.
