Subject: Caramel Apple Bread

Caramel Apple Bread
15 caramels (Kraft variety preferred)
1 1/2 cups all-purpose flour (divided use)
1/2 cup (1 stick) butter or margarine, at room temperature
2 cups powdered sugar
1 1/2 teaspoons vanilla extract
3 eggs
1 teaspoon ground cinnamon
1 teaspoon ground allspice
1/4 teaspoon salt
2 apples, peeled, cored and finely chopped

Heat oven to 350º. Grease and flour a 9- by 5-inch loaf pan and set aside. Unwrap the caramels, and, using scissors, cut each into eight pieces. Toss with 1 tablespoon of the flour in a small bowl to prevent them from sticking together; set floured caramels aside.

Using an electric mixer, beat the butter, sugar and vanilla until fluffy. Add the eggs, one at a time, beating well after each. In another bowl, stir together the remaining flour, cinnamon, allspice and salt. Add the flour mixture to the butter mixture and blend well. Using a wooden spoon, stir in the apples and caramel pieces. Spoon batter into prepared loaf pan.

Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack and then remove from pan.
