Macaroni and Cheese

6 ounces elbow macaroni (1/1/2 cups)
3 tablespoons butter
1/4 cup finely chopped onion
2 tablespoon all purpose flour
1/2 teaspoon salt
Dash of pepper
2 cups milk
2 cups cubed Velveeta cheese or American Cheese
1 medium tomato, sliced

Cook macaroni according to package directions, drain.

For cheese sauce:
In a saucepan melt butter, cook onion in butter until tender but not brown. Stir in the flour, salt and pepper. Add milk all at once; cook and stir until thickened and bubbly. Cook and stir 1 - 2 minutes more. Add cubed cheese; stir until melted.

Stir macaroni into cheese sauce. Put in a 1 1/2 qt casserole dish, arrange tomato slices on top of macaroni and sprinkle with a little salt. Bake 350º 30 -35 min. until heated through. Makes six servings.
