Homemade Fudge

4 cups sugar
12 oz can evaporated milk
18 oz bag chocolate chips
1 lb butter cut in one inch pieces
1 Tbsp vanilla
Chopped nuts if desired

Bring sugar and evaporated milk to a rapid boil in a tall large pot. It will boil over if in a too small pot. Boil for 9 minutes EXACTLY, stirring constantly (this is not a rolling boil, but a simmering boil over about a medium heat, but make sure it is boiling) Then remove from heat and add chocolate chips, butter, and vanilla. Stir ..the butter and chips will melt.

Pour into a mixer or a large bowl if using a hand mixer, and blend thoroughly on low speed, then beat on medium speed for exactly 10 minutes(At that point you can add walnuts if desired, or do half and half - pour in two separate pans)
Pour into buttered 9 x 13 inch pan. Place in refrigerator. After 30 minutes remove to score (makes it easier to cut later) then return to refrigerator for about 4 to 5 hours.
Store in the refrigerator under foil..plastic wrap will melt it a little.
