Subject: Iva's Peach Cobbler

Iva's Peach Cobbler

1 large can or 2 reg. size sliced peaches, with juice
2 1/2 T. cornstarch OR
3-4 T. instant tapioca
3/4-1 cup sugar
1/2 tsp. cinnamon OR
1/4 tsp. nutmeg

Crust:
1 cup flour
2 egg yolks
1/4 cup margarine or butter, melted
1 tsp. baking powder
1 cup sugar

2 egg whites, stiffly beaten

1.Melt margarine in 13"x9"x2" baking pan at 375º, while oven is preheating.
2.Measure crust ingredients into bowl, and make a well.
3.Add the margarine and egg yolks in the well and beat it by hand or with a whisk.
4.Fold slowly and gently into the beaten egg whites.
5.Mix the peaches, tapioca or cornstarch, with the sugar and cinnamon or nutmeg in the baking pan.
6.Spoon the crust mixture over the peaches and using the back of a spoon, spread out to the edges.
7.Sprinkle with sugar if desired.
8.Bake 40-45 minutes.
9.Serves 10-12.


This can be made with any canned, fresh, or frozen fruits
