If I recall correctly, the Bearded Clam is at the center of the Pie. I would especially suggest the plump-lipped Clam. You must handle this ingredient with gentleness, as it is quite sensitive. If handled properly, the pie will have a great amount of natural juiciness and aroma. Never forget the Coral Orchid - A Great Garnish !!
