Subject: Toy PU 22rec overheat/pressure problem

I've been in automotives a while, and I never heard of this before. Ive been told that the reason a 91 Toyota P/U 22rec engine will spike hot if I leave the cap on tight, but not if I "babysit" the rad cap until it reaches temp. is a cracked head that will close up once it's warmed up....
Engine run great, but the guage will go right to hot if i don't watch it, and the thermostat is new (twice actually)
any input? This is a freshly installed engine, and we've purged the air( I believe) completely!
