 You can do quite a bit with that. I have a 6500 which was my first Mac as well and I made a project out of upgrading it a few years ago. You can see a list of what I've added to it along with a few pictures here:

There's actually been a couple of changes since I made that list. I currently have a Radeon 9200 128MB video card instead of the 32MB one. I also have a Radeon 7000 64MB card that I sometimes swap in instead of the 9200 because I've seen better performance for certain games with one card over the other.

I also successfully installed OS X 10.2 on it just for novelty.
