What interests your student? What else are you studying? Writing assignments can be used to learn more about what your student has learned, what he enjoyed, opportunity to go a bit more in-depth about a topic of interest. Write an "if I was there" paper about your history topics; write about your science topics; or a famous scientist; a current event; a letter to a historical figure, (or from one); retell a Bible story in modern setting; write a "how to" paper, etc.
