Sarah-
Try inviting your friend over just to help you do simple things like grooming, feeding, etc. This will help build her confidence and hopefully give her the courage to ride again. Offer to ride with her and even lead her horse around until she feels comfortable. Take it slow and don't push her. Your friend obviously loves horses, and with time, she'll probably remember how wonderful riding them can be. Be patient and compliment her for even the smallest improvment. Good luck!!!
