Hey Mike,
As a short little "intro" I have 2 BBs (& a Bouv) I train for Personal, Home, & Vehicle protection, as well as compete with in bitework Tournaments & (eventually *g*) Trials.
#1 my dogs are my friends & pets.
#2 my dogs are expected to fulfill their "job": Protection.
#3 my dogs are one of my greatest sources of pride & enjoyment.. so much so I love to spend time training them (multiple times a week) to be able "show them off" in public venues.
I help train & handle (certified) Police K9 dogs.. my favorite being a 93# Malinois Patrol/Narc K9 named "Togo". >=^) Last week I handled a K9 dog that has had "live bites" while on duty.
I only "go on" to try to give you a feeling of "where I come from" with my experiences concerning "real dogs".. not to be trite! lol

IMO, a dog/puppy geared for bitework *should* be started as young as possible, provided they have the *correct drives* for it. I started my BB bitch Batu at about 12 weeks. In my up-coming litter, I will start imprinting (testing) the pups for bitework at 5-6 weeks of age.
You have received some great advice that it will really depend on your dog & your trainer. A couple other somewhat blunt words of advice: While looking for that trainer, *please* keep in mind you are somewhat limited in people that have experience in working Molossers.. and some trainers WILL intentionally screw your dog up b/c they don't like that type/breed. -Don't ask me WHY these morons don't just turn down training the dog instead! We have a couple dogs that have come to us for training in the last year that have had this happen to them.
And IMO, some of the people I've seen marketing themselves a "PP Trainers" leave something to be desired. If the dogs they work/train can't come out onto a strange field/place & bite a guy s/he's never seen before, there's some Real Problems going on with their methods! The likelihood a dog that exhibits this kind of weakness, *actually* stepping up in a real confrontation is slim-to-none.
YOU are the only defense your dog has against stupid & sadly sometimes abusive, training.
