"I'd like to replace with a smooth white surface, and both EPDM and modified have been suggested. Any suggestions?" If you are looking for a smooth white surface I have never heard of a modified color other then black then the colors were decided by the granular surface.

"Does it differ if I build it up to low slope?" This is not a real concern with the low slope roofs. All flat roofs perform better with some sort of a saddle system flowing the run off towards the scuppers on the roof deck. This should be done in such a way to eliminate standing water on the roof deck. There is more prep work for the EPDM on the slope deck due to where the plywood seems are. There are many affordable roof coatings that can be applied to a properly cleaned modified roof that can extend the life of these roofs another five years.
