One of our favorite Mexican dishes started with Old el Paso Mix. They have in them Mexican part in the grocery store, It's called a Tortilla Bake mix. In it is, 4 flour tortillas, cheese spread, and sauce. You add the hamburger or chisken. You make it in a crockpot or it can be baked in the oven. I buy two mixes to make more then the two/three layers, making it 5/6 layers. Sometimes I buy one mix but extra torillas, and cheese whiz or velveeta, extra meat, extra chesse for the top and salsa and do my own version. MMMmmm good! and extra easy to make and take in the crockpot.

MEXICAN CHEESE DIP

1 8 ounce package cream cheese, softened
1 8 ounce package shredded cheddar cheese
1 each red, green, yellow chopped peppers
1 jar salsa (any kind)
1 bag of chips or crackers
1 pie dish or a glass baking dish

Spread the softened cream cheese on the bottom of the pie or baking dish.
Layer salsa on top of the cream cheese, followed by a layer of shredded cheese, and finish by topping with the chopped peppers.

Serve with chips or crackers.

This may be made the day of the party or even the day before. It is a family hit at my house
