MacSweens of Edinburgh are one of the best makers of haggis (I know because I've tried their version and it is rather nice). They do both the original and vegetarian versions. Recipes are included in this page and some information about the history of haggis and when it was first heard about - it transpires now that haggis now originates from around Viking times and not from the Highlands where they live skipping around heather and hills of Scotland (*giggle*).
