Yes. Not in the head but in the corresponding info dictionary area of pdf documents. You can figure this out if you open the document with info fields edited inside PDF Explorer in Acrobat and check there that same info.
This only occur if the files are in a RW media. If this is not the case (i.e. CDR0M R) the information changed only exist in the PDF Explorer database files (PDEDB.IDX and PDEDB.INF)
