Hi Mike,

PDF Explorer does this already. Simple edit the info fields in the InfoEdit Panel and if "auto update changed info fields" option is active and file is accessible are automatically updated.
If auto update is disabled click the save button that appears if you change any of the fields.
Use Fast edit mode (button in infoedit panel) to view and copy text from pdf to info fields.
