You are talking in the situation of edit metadata with pdf reader (Acrobat or another) involved, using PreviewInGrid panel or QuickEdit mode? Or just edit metadata with the InfoEdit tool?
If reader involved, check if the problem also occur if you, in the same number of files situation, only edit the metadata fields but the pdf reader is not involved.
Also check if the situation also take place if another reader is involved. You can change the internal reader in Edit>Preferences>InternalReader.
Try the Foxit pdf Reader from Foxit Software (download from www.foxitsofware.com). To use this reader configure PDFE Internal Reader to "Internet Explorer Default" option.
