You are probably talking about the columns widths?
To keep custom widths between sessions you have to create a custom grid layout. Right click the layout selector, select new... from the context menu, in the layout editor place the fields you want to view in grid, give it a meaningful name an click ok. Now you can change the columns widths and they are preserved into next session, even if you change to another grid layout. The standard grid layouts always space columns equally.

If grid sort order is you question, verify if the auto sort checkbox is checked in Edit>Preferences...Appearance
