You can do the rename easily creating a custom PDF Explorer idiom interface file. Go to the "Lang" sub-folder, you find it in the PDF Explorer main installation folder, duplicate the English.lng file giving it a meaningful name like MyInterface.lng. Now edit that file, using Windows Notepad, and rename these fields, but keep the left numbers intact.

[PDFEStrings]
000000005966629=Title
000001522076580=Subject
000000076328802=Author
000021962320051=Keywords
000001250659170=Creator
000023510890946=Producer

Now you only need to select that file as the active PDF Explorer interface file. In PDF Explorer menu Edit>Preferences-Current language, select the MyInterface[English] item. ;-)
If some doubts persist let me know.

Currently we can not add more fields, but that option is already in the TODO list.
