I have seen Simon 'The Wind Sock' Davies and he has a cheese that one can only crave for. My mind casts back to round one of the 2004 competition when 'The Wind Sock' took me under his 'sleeping bag' and taught me a bit of cheese maintenance. I have never looked back.
