Your best bet is to get onto breeders in America, as they seem to have more knowledge and experience with FSF. I have done a lot of research on this and it can be very hard to diagnose and you really need a vet who knows what they are talking about. You probably wont find a breeder in Australia who is willing to talk about their experiences with FSF, which is a shame, because it does exist, my vet alone has diagnosed 10 cases of it in Shar-pei, but I have not heard of any breeder who will admit that they have had it. Good luck and I hope your dog does not have it, but get into contact with the shar-pei club of America for more info.
