Some of you asked me to post my fruitcake recipe on the board. So here it is.


Fruitcake

Ingredients for 4 people:
12 oz of dried fruits
Some rum or tea
5 oz of butter
4 oz of sugar
3 eggs
7 oz of all-purpose flour
1 teaspoon of baking powder
Some salt

Dried fruits: I make my own mixture with dried cranberries, dried Bing cherries, dried mango, and the mixed fruits containing pears, apples, raisins. But you can use any fruit you like.

If you don’t want to use alcohol, use hot tea instead of rum for soaking the dried fruits.

Ladies, you may need your husband / boyfriend to help stir the dough.

Preparation:
Preheat the oven (350° F).
Let the dried fruits soak in the rum (or hot tea) for 20 minutes or so.
Put the melted butter in a bowl and add the sugar. Whip butter and sugar until light and fluffy.
Add the eggs one by one, whipping each egg into the mixture.
Mix the sifted flour with salt and baking powder. Add this to the butter/sugar little by little.
Add the soaked dried fruits with one tablespoon of the rum/tea you used to soak the fruits.
Pour in the mold.
Let the cake bake for 25 minutes at 350 F, then another 25 minutes or more at 250 F.
I usually check the cake by sticking a knife into it. If the knife comes out clear, the cake is ready. If it comes out with sticky dough, the cake needs to be baked a little longer.
Let the cake cool off, unmold it and store it for 24 hours before eating it.
