Cedar is hard to work with in some ways and easy in others. The problem with cedar is chipping. Those knots have a tendency to chip out. But they're pretty if you can keep them. I mix glue and water and use a syringe to inject glue into the knots before planing the wood. It's worked very well for me.

Cedar is screechy in itself. Try a walnut paddle on it for a quick fix. But try reducing the angle of the sides by about 1 degree or possibly thinning the sides just a bit more.
