You're right, fresh salmon is so good, at least to me too and many others I know. Last summer we were in northern Canada. One Canadian we know there was married to a First Nation woman when he was younger. His daughter had been visiting and brought canned salmon her mother had prepared. We had one of those cans for goodbye present. Back home we opened it and ate it - it was delicious! And, while in Canada, we also spent a couple of evenings with a First Nation family. First we had dried salmon (salmon sticks with bread) for a snack to munch on until the fresh salmon was bbq:ed. We loved it all. Yum-yum! :o) In all eight adults got full from that piece of fish and if I don't misremember, it was not even a forth of the entire fish. Until now I didn't know salmon can be huge.

As to canning salmon; I think people think practically, they have to (depending on who is doing what when and where ofcourse). Canning may be a fast and good way of storing the fresh fish in case you have no freezer and have no time for the procedure of drying and/or smoking it.
