Then, once free to move about, complete a pivot turn (http://www.cruising.sailingcourse.com/animated_gifs/pivot_turn.gif) and eventually you'll get the bow to point in the correct direction.

Sometimes it is better to go with the manner in which the boat behaves than to try and counteract it.

Scott,
You can always put some sort of dead eye in the dock on the starboard side, run a line thru it and back to the boat. As you back out slowly hold it, causing the boat to pivot to starboard. When it has turned far enough release either of the lines running to the dock and retrieve it on the boat.
Or you can push the boat out manually and push the bow the direction you want, if the rudder is in the correct position, it will keep going that way. This requires some agility. That is what I do.
As far as prop walk, once the trans is in neutral, there shouldn't be any. Is there a currant or wind pushing the bow sprit? Where are you located?
