No problem, Kate. Try these two:

1. MegaMelon & Prawn Salad

1 coral lettuce, washed and dried
500g cooked, shelled prawns
1/2 honeydew melon, chopped into 2cm cubes
1/2 rockmelon chopped into 2cm cubes
1/2 cup ranch dressing

Arrange lettuce on a serving platter with prawns and melon.
Whisk whish rance dressing and tomato sauce together and drizzle over


2. Thai Yam Salad

20 Fresh Tiger Prawns
½ Onion
1 Tomato
1 Cup of Cucumber
1 Tbsp Ground Roasted Rice
1 Tbsp Spring Onions

For the Sauce:
4 Small fresh Thai Chill's
1 Stick of fresh Lemon Grass
2 Cloves Fresh Garlic
2 Tbsp Fresh Coriander Root
1 Tbsp Fresh Ginger
2 Tbsp Lemon Juice
1 Tbsp White Vinegar
1 Tsp Salt


Peel and de-vein the prawns. Slice the onion and tomato. Dice the cucumber into small pieces and chop the spring onions. Chop finely all the sauce ingredients together adding the lemon juice, vinegar, fish sauce and sugar, mix well and leave to one side to infuse for approx. 30 minutes. Char-grill the Prawns or boil until the prawns turn pink, and then place into the salad bowl. Mix the prawns, vegetables and roasted rice together and then add all the sauce in and mix well.

Serve with salad, garnish with coriander leaves.
