Tom,here is the recipe I use in my catering. Simple but good.

SMOKIN’ JIM’S BAKED BEANS

2 Kg. Navy beans
1 Lb. Bacon (chopped)
1 Large Onion
2 Tbsp Roasted garlic & peppers
2 Tbsp Chili powder
1 Cup BBQ sauce (your favorite)
3/4 Cup Molasses


Put the beans in a large pot with about 12 cups of cold water. Soak in the fridge over night. Rinse beans and replace water to 1" over the beans.
Bring to a boil and let simmer while you prepare the rest of the ingredients.
Chop bacon and fry til about 1/2 done. Add chopped onions and cook until translucent. Drain excess grease and add to the beans. Add remaining ingredients, stir, put in covered pot in the oven for about 6 - 8 hours at 250 deg. F. Uncover and stir for the last hour. When the beans are tender, they are ready. If you cannot get the seasoning mix mentioned above, season with whatever your taste would like.
