thought i would post here because i think it is a VERY important subject and would not want to hear about anyone having problems with a home made mix.

Mike is correct with his above statement and when using a "home made" mixture i would never recommend using it as a dry cure. as a wet cure thats another story. when cooked into a brine cure you will have a safe consistent mix.

on the other hand i must admit to using both wet and dry home made mixes in the past (maybe thats why many believe i'm unbalanced lol) but after becoming more educated on the subject would not use it again or recommend using it unless it was in a wet brine.
