Subject: Paul Kirk Class

Thanks to Scotty J, Paul Kirk and his wife and everyone who helped put on a heck of a great class yesterday. It was a thoroughly enjoyable day and it was great to see some of the faces behind the CBSA. I picked up some good pointers and new tricks for cooking the old favourites. Now I can't wait to try sausage making with the simple method Paul taught. We had brisket sandwiches for lunch today and it melted in your mouth. Now ut's time for shopping for a new smoking rig.
