Subject: Did Salmon yesterday

I smoked a couple of salmon fillets yesterday and received rave reviews from the family.

I brined for 2 hours in a brown sugar, salt, minced ginger, bay leaves, crushed allspice and water.

Just before smoking I brushed on a bit of honey and a sprinkling on green and pink peppercorns. I smoked them over alder and apple at about 200 for 90 minutes. They were not very thick so they cooked quite quickly even at that low temperature.
