Porky2 , sorry i'm so late getting back . the brine is - 1 gal purified water - 1 1/4 cup coarse salt - 1 cup brown sugar - 2 or 3 cloves garlic - 1 onion minced - 1 or 2 bay leaves . bring to boil on the stove and cool to 40 degrees .
brine for min 3 hrs . rinse and pat dry . let dry in the fridge for a few hrs if you like or you can proceed . i smoke them at about 250 for about 2 hrs depends on the size of fillet and your liking . we here like them moist , just flaking with a fork . i use hickory for the wood but many say alder is real good never tried it . if you like you can also sprinkle brown sugar or honey on the flesh when you put the on . oh , and skin side down always . hope this helps . reg
