morning Qfan. your blender will work just fine by pulsing. try to use the same amount of fatty shoulder and goose breast. your mixture should be 30% fat if you can. the important thing to remember is salt, 1 level teaspoon/lb of meat. the rest is up to you but this is one that i like, again measurements are in one lb increments, 1 t salt - 1/2 t ground black pepper - 3/4 t ground fennel - 1/2 t granulated garlic - 1/2 cup water or white wine. thats it BIG Guy.
